Baptism Quiche

At the boys baptism, I had several people ask for my quiche recipe, so thought I would post it here for everyone. It's actually a take on a receipe from All You magazine, but here's what I typically do:

Base

- 1 cup milk

- 1 cup heavy cream

- 2 large eggs plus

2 large egg yolks

- 1 cup grated cheddar (I typically use quite a bit more than this, but can't give you a measure)

- 1/2 tsp of salt

- 1/2 tsp of pepper

- 1/4 tsp ground nutmeg



Other add ins

- spinach

- ham, turkey

- onions

- tomatoes

- broccoli

The base ingredients above (along with your choice of add ins) should be mixed together and a) poured into one nine-inch pie crust or b) poured into mini muffin tins without a crust. The large pie bakes for about 45 mins to an hour at 350 and the mini quiches bake about 25 mins at 350. Many times, like at the baptism, I double the recipe and use two pie crusts in a pyrex dish. This bakes for about an hour and fifteen minutes.

For the baptism quiche, I used ham and spinach. I like this quiche base because it isn't as "eggy" as some of the others. I think the heavy cream really helps with that. I have used all milk to save some calories and it works, but isn't as fluffy and good.
