Good Eats - Menu Plan

Oh how a menu plan can save my life!  It's not just knowing what is for dinner and having a schedule, it's the money I save when I know what's for dinner and what is coming next!

With that said, here's what is on the menu for this coming week, complete with links to recipes:

Sunday:  Sausage and Cabbage
Monday:  Mini Meatloaf
Tuesday:  Spaghetti Carbonara
Wednesday:  Out to Eat
Thursday:  Roast, Potatoes and Carrots in the crock pot
Friday:  Cheese Enchiladas
Saturday:  Create Your Own Pizza

I promise to get better about taking photos for you guys!  Dinner always seems to be a bit of a rush - so I always forget!

Let me know what recipes you try and what you like - and if you have any good recipes for me to try, leave them in the comments!

Homemade Tomato Sauce

It's been a journey, but I have continued to  move our family  in the direction of more organic, nourishing foods.  Commonly referred to as the real food movement, my goal is to make food for my family from ingredients that are easily recognizable and have been consumed for many years.

I've made homemade tomato soup before, it wasn't hard at all, but the peeling and seeding was time consuming.  Come to find out, peeling and seeding are also unnecessary!  Before I did a lot of research on foods, I used commercially canned tomatoes constantly.  I really didn't know there was any other way.  But, now I know and I can't bring myself to feed commercially canned tomatoes tomatoes to my boys.

The process for this sauce is so easy.  It's truly a shame that tomatoes aren't a winter fruit, this would be a great way to warm your house in the cold months.  But, alas, they come in summer and one must make sacrifices!  For this batch of goodness, I quartered tomatoes, chopped a bit of kale and basil and threw in some baby carrots with some onion and garlic.  I covered everything in foil and baked at 325 for about two hours.  I can fit four pans in my oven at a time, so that's what I did.

After roasting, everything was soft and easily chopped up in the food processor.  You can make it as chunky or smooth as you'd like.  I actually wound up pouring off some of the juice to keep my sauce thick (don't throw it away, though, you can use it to boil pasta or make soup), it's all about personal preference.

I don't know how to properly can, so I just store my jars in the fridge or freezer.  Yes, you can freeze glass canning jars, just don't heat them when they are cold or they will burst.  Now, I have plenty of tomato sauce that I can use all year long, straight over pasta, or in freezer batch cooking recipes like this.   My kids also love when I add a bit of chicken broth to the sauce and serve it to them as soup!

Menu Plan

Next week will be our last week of driving back-and-forth between our old house and new house for therapy lessons.  This will be such a help in getting us settled here and also give me some time to get everything in order around here and get our homeschooling time back on track!

I did a bit of bulk cooking today and got some pumpkin muffins and a huge vat of tomato soup made.  I'm going to try making this batch of soup by roasting the tomatoes instead of peeling and seeding them. We'll see how it goes!

Here's what's on the list for this week:

Monday: Out to eat
Tuesday: Quiche
Wednesday: Stirfry (I don't have a recipe for this, just brown rice, chicken and a bunch of veggies!)
Thursday: Crockpot Chili
Friday: Pizza
Saturday: Leftovers
Sunday: Meatloaf

In my CSA basket this week I received a whole bunch of potatoes, sweet potatoes and acorn squash.  I have some ideas for what to do with them, but would love your input too!  What would you do?

I'm linking this up with Menu Plan Monday... great recipes there!

Menu Plan

Well folks, it's been a while since you've seen a menu plan or batch cook out of me.  I guess moving will do that to ya!  We're still traveling back-and-forth a lot between our old house in the city and our new house in the country for speech therapy, occupational therapy and play therapy.  Pretty soon those therapies will move a bit closer to home, but we wanted to finish out a few things with our original therapists first.  With this weekend being a holiday weekend, the menu is quite light.... I'm trying  to eat some things down so that nothing goes to waste while we're at the lake over the weekend.  So, here's the plan:

Monday:  Sandwich Wraps
Tuesday:  Tomato Steak (crock pot)
Wednesday: Pasta Bake
Thursday: Leftovers
Fri-Sun: At the lake

Need more ideas?  Head on over to Organizing Junkie to see what's cooking in the kitchen.  AND don't forget!  I've got a give-away going on!

Menu Monday

We're getting back into normal routines around here after a couple of weeks off (a bit more on that later). It feels good to be back in planning mode, but I really need to get a good batch cook in to feel complete and ready to take on the world. That might happen Sunday, we'll see.

If you're looking for batch cooking ideas and menu plans I highly suggest you check out www.orgjunkie.com. Great ideas!

I did make some big batches of tomato sauce, tomato soup and zucchini hummus yesterday with some produce I had on hand. I also made a good amount of chocolate LaraBars that will hold us in breakfasts for a while.

My diet has had to change due to some health issues I am battling, so I am now gluten and dairy (no beef either) free. The kids are still gluten free, of course, but I'm not going to limit their dairy for now. It would be nice to cook one meal for everyone, but since it's just me with the need to limit dairy my plan is to just eat a salad if I've prepared something I can't have for dinner. I'd really like to try my hand at some dairy free alternatives, but I've tasted soy and rice cheese before and have to say it wasn't super yummy!

Monday: Sour Cream Pasta Bake
Tuesday: Neighbor Dinner
Wednesday: left overs
Thursday: Snacky Supper - this will probably become a Thursday routine as we head to a local live music venue to eat and hang with friends
Friday: Broccoli Chicken
Saturday: dinner with friends - we're bringing fruit
Sunday: left overs or Pizza

Do you have any wonderful dairy free recipes? I'd love for you to share! I feel pretty proficient and coming up with gluten free alternatives, but the dairy has me stumped. I feel some experimentation in the kitchen coming on!

May 30, 2011

My goal this week?  To get the freezer, pantry and produce eaten up before we head out of town.  I haven't done a big batch cook in a while, but I've got some great plans for when I get back.  I'm armed with my new food processor, two new cookbooks and lots of new ideas, so I can't wait!

This week we'll be at my family's lake house through Memorial Day, so it's a bit of a shortened week.  Here's what's on the schedule:

Tuesday:  Neighbor Dinner
Wednesday:  Meaty Cheesy Shells (Teen MOPS is over for the summer, so I can actually cook again on Wednesdays)
Thursday: Mexican Buffet
Friday: Left-overs or Pizza night
Saturday:  We're off to the beach!

Breakfast ideas this week include: scones, pancakes, cereal, fruit and oatmeal
Lunches: pancakes and peanut butter, cold cuts and cheese
Snacks: smoothies, fruit, veggies and hummus

Remember this?  Yep, that was my ugly meal plan board.  It was functional, but it wasn't pretty, and I like pretty.

So, I've upgraded!

I love pretty paper and own several of these check lists from Who's There, Inc. a California company.  If I had all of the money in the world, I'd probably rush out and purchase each of the items on their site.  Their check lists are made using old home economics lists, but are so much more chic.  I have their shopping and to-do lists, and would love to have the packing list.  Can you tell I have a bit of a pretty paper obsession?

Menu Plan - A Gimme

I love when the stars align just right and I get a week like this.  If you're a mom, you know how rough dinner time is.  This week, there are very few dinner times that I have to worry about.  How cool is that?

And you know what, it was just when I needed it!  We're working on some behavior things over here that need my full attention.  Less dinner prep = more attention for my kids and more energy for me to handle some of the big stuff.  Such a blessing!

I did do a tad bit of batch cooking this week, making a vat 'o tomato sauce with some fresh CSA produce (our garden isn't quite ready to eat out of yet) and a vat 'o apple-and-sweet-potato sauce.  Yum!

So here's how it pans out:

Monday : Casserole Swap with my neighbor (her turn to cook)
Tuesday:  Neighbor Dinner
Wednesday: Pasta with Pea Pesto
Thursday: Goulash (we wound up not eating this last week due to a plethora of left-overs)
Friday: Marriage Retreat (kids are staying with Heath's parents)
Saturday: Marriage Retreat
Sunday: Dinner out (we'll just be returning from the marriage retreat and picking up the kids)

Heath and I are super excited about spending some time together on the marriage retreat with our Bible Fellowship group!  We haven't ever been on one, and since we're nearing a decade of marriage together, I think it's about time!

Batch Cooking - Menu Plan

It's Monday! Time to tell you what's for dinner!

Monday: Three Cheese Beef Pasta Shells
Tuesday: Neighbor Dinner at our house - Sour Cream Noodle Bake
Wednesday: Left Overs
Thursday: Goulash
Friday: Mexican Buffet - Easy Cheesy Chicken Taquitos for the big people, spinach quesadillas for the littles
Saturday: Friends for Dinner - Make your own pizza (and there will be cake, it's Heath's Birthday!)
Sunday: Out (zoo day!)

I know I didn't post a menu last week... actually I didn't post much at all last week! Our internet was down and I can only do so much from my phone! I'll have to plan another batch cook in a week or two... just to add some variety. Until then, the freezer is stocked!

Batch Cooking

Over the past couple of days I hunkered down and got some cooking done.  It wasn't one of my usual Sunday cooks, but the job got done.  I haven't had the chance to cook for a while, but I had to squeeze it in... I did my last cook a long while back and the freezer was starting to get empty!

We've also moved back to gluten-free eating due to some issues with the big boys... so I've listed modifications in the notes below.

A lot of what I made were new recipes, which I'm so excited to try!  Here's the listing:
- Pizza Crust (4)
- Pumpkin-Ricotta Stuffed Shells (2) (I used brown rice pasta for this, the large shell shape was hard to find)
- Pea Pesto (2)
- Sour Cream Noodle Bake (3) (I used quinoa for this one)
- Carrot and Broccoli Orzo (3) (quinoa again, but I think I'll try it next time with just plain brown rice)
- Lasagna (I made this batch gluten-free with polenta)
- Cheesy Chicken Taquito Bake
- Three Cheese Beef Pasta Shells (this wasn't part of my original plan, but I wound up with a ton of extra shells from the pumpkin recipe, so I used it to my advantage)

I also made a large batch of lemon bars to share and a huge vat 'o laundry soap.

I'm feeling caught up again and even have my plans and shopping list for my next cook!

If you're new to batch cooking, I suggest you drop everything you're doing and start now.  Kidding!  But seriously, if you're interested in batch cooking, check here to get some of my tips and tricks.

Our menu for this week will be as follows:
- Monday: Mini Meatloaf (having friends for dinner)
- Tuesday: Pumpkin-Ricotta Stuffed Shells (neighbor dinner at our house)
- Wednesday: Left-overs
- Thursday: Steak Chimichuri
- Friday: Corn and Cheese Enchiladas
- Saturday: Kid food night (sitter swap with friends)
- Sunday: Left-overs (MOPS date night)

Frugal Friday - Make it Yourself

I grew up in a small town in Texas known for one thing... fruitcakes. No, no, not people who act like fruitcakes, actual fruitcakes.  Since 1896, Collin Street Bakery has been making and mailing fruitcakes all over the world.  I don't know who eats them, but I know they make a lot of them.

Since I grew up there, I don't eat fruitcakes.  You were kind of made fun of if you admitted to liking them, but Collin Street Bakery made a host of other yumminess that were a staple at every bake sale and baby shower.  Their lemon bars were always a favorite of mine.  I have no problem admitting that I could often be found by the lemon bar plate at any given party... and the big bonus was that they were always there!

My mom recently found a recipe for lemon bars and mailed it to me.  I have to admit that I was a bit leery to try to make them.  The lemon "custard" part was full of eggs.  Would I cook it too much?  Would I cook it too little and kill everyone with Salmonella?

I'm happy to report that, even after making a few adjustments to the recipe to make them gluten free, no one perished.  In fact everyone liked them... they really, really liked them!

I started with this basic Betty Crocker Recipe, but made a few exchanges and doubled the recipe (honestly who makes a dessert in a 9x9 pan?).  Here's my recipe after the science experiment in my kitchen:

Gluten Free Lemon Bars

You'll need:
2 cups Bob's Red Mill All Purpose Gluten Free Baking Flour - second only to Pamela's, this stuff is a lifesaver
1 cup (2 sticks) butter
1/2 cup powdered sugar (plus a bit extra for garnish)
2.5 cups sugar (yes, I did up the sugar.  Often a necessity when switching from regular flour to gluten free)
The juice and zest of 4 lemons
1 tsp baking powder
1/2 tsp salt
4 eggs

To make:
Heat oven to 350.
Mix flour, butter and powdered sugar together and press into a foil-lined (and greased) 9x13 Pyrex.  Push some up the sides to create a crust edge.  Bake crust alone for 20-30 minutes.
While crust bakes, beat remaining ingredients together until light and fluffy - I just used a hand grater for the zesting and cut and squeezed the lemons by hand.
Pour lemon mixture over hot crust and bake an additional 30-40 minutes, until lemon mixture is set.
Let cool an hour before cutting into squares and serving.

The original Betty Crocker recipe suggested a non-greased Pyrex, no foil.  I could never cut pretty squares that way, so I lined and greased the pan.  Everything popped out easily and I had one less Pyrex to wash!

Yum!  You can refrigerate any left-overs you may have, but I wouldn't necessarily count on having left-overs!

And don't you dare going throwing all of these lemons away!  Sprinkle them with baking soda and get to scrubbing!  These are the perfect (frugal, natural) solution to the ring around the tub or the stubborn gunk that unshines your kitchen sink.  Then, after you're all done scrubbing, throw these down the disposal...nice and clean!

With the internet, so many things that we grew up loving are easy to recreate.  Just do a bit of research and have a willingness to try, and BAM, you've saved some dough!

Menu Plan

Wow!  Am I ever glad that today is over!

The highlight of my day today was finding the double cart at Wal-mart, beside that, we'll just say that none of it went according to plan.

The house flooded...

Holden had a poop explosion on our way into MOPS....

It was cleaning day and sheet washing day...

It's days like today that batch cooking and menu planning are SO important!  If you haven't tried your hand at batch cooking yet, please read through some of my tips and tricks.  It's not near as intimidating as you would think!

Here's our plan for this week:

Monday:  Casserole Swap (my neighbor and I started this a while back.  We take turns cooking on the first and third Mondays of each month.  Oh my how wonderful it is!  This week was her turn to cook!)
Tuesday: Neighbor Dinner
Wednesday: Left-overs
Thursday: Stuffed Peppers
Friday: Pizza Night (Heath's at NASCAR)
Saturday:  Left-overs (Heath's at NASCAR)
Sunday: Dinner at the Ballpark

This plan keeps me out of the kitchen all week since everything was cooked in the weeks prior.  Just click on the links above to get recipes and see how my cooking was planned out... see how amazing batch cooking is?

Menu Plan

I've been drooling over these menu boards lately. Seriously, how could you not? Mine's a super simple Word doc in a lamination sheet... at least I used a pretty font!

You can see our menu for this week proudly displayed on our not-so-chic board. Yep, I'm going to be that lazy this week!

Batch Cooking - Menu Plan

Oh Spring Break, how I love thee!

I can't even begin to imagine how wonderful Spring Break is for you moms who have kids in school full-time.  I only have one in a half-day speech therapy program and I'm already over the moon that I get to spend time with him this week... and have a lot less of a schedule to go by!

We're also not doing our homeschooling this week, just some wild fun and time with family!

We're headed to the lake for the weekend, so my meal planning for this week is light.  Here's the schedule:

Monday:  Spaghetti Pie (I know this is always on our meal plan, it's cheap, easy, and my kids adore it)
Tuesday:  Neighbor Dinner
Wednesday: Roast
Thursday:  Leftover Buffet
Friday: McD's on our way to the lake
Saturday: At the lake
Sunday: Breakfast for dinner

It's starting to get warm here, so I'm trying to compile as many crock pot recipes as I can for the summer.  Do you have any that you love?  Please share!

My favorite site for crockpot cooking is Crockpot 365.  I've tried tons of her recipes and they've all been hits!  Once summer starts, cooking on the stove or with the oven becomes near impossible!

If you're searching for some dinner ideas, or want to try once-a-month cooking like me, I highly suggest you check out these sites:

Batch Cooking - Menu Plan

I've been a big slacker when it comes to batch cooking lately... I've gotten behind on a few other things, and those things have taken precedent.  BUT, that isn't a big deal because my hard work on other days has paid off. Remember those huge cooks I did here, here and here?

We're now reaping the benefits!

Even without a big cook, I'm still staying out of the kitchen.  It might take a bit of extra creativity, but we're surviving!

Here's the plan for this week:

Monday - Casserole swap with the neighbor (her turn to cook)
Tuesday - Fat Tuesday Pancake Dinner at church
Wednesday - Spaghetti Pie
Thursday - Citrus Chicken
Friday - Left-over Buffet
Saturday - Pizza at a birthday party
Sunday - Dinner with friends

I did, however, make a couple of batches of pizza dough... we were out of that staple!

Here's our menu plan for this week:

Monday: Red Beans and Rice with Sausage
Tuesday: Neighbor Dinner
Wednesday: Left Overs
Thursday: Dinner with friends
Friday: Pizza Night
Saturday: Sweet Citrus Chicken
Sunday: Cranberry Beef

Batch Cooking

Another successful batch cooking day!  Our freezer is STOCKED to the gills, so I'll be taking next week off!

This week I made: two hash brown casseroles, two pasta and bean casseroles, two chicken noodle bakes and a big vat 'o homemade Spaghetti Sauce.  All the recipes are part of this weeks' menu plan, so they are linked up below.

Monday:  Hash Brown Casserole - It's my turn to cook for the casserole swap, so I'll be making two and giving one away
Tuesday: Neighbor Dinner
Wednesday: Left Overs or Pea Pesto Pasta
Thursday: Pasta and Bean Casserole (we're having some veggie loving friends over for dinner - I'm excited to try this!)
Friday: Chicken Noodle Bake
Saturday:  Lasagna
Sunday: Left Overs

Even though I won't be cooking next week, I'll post our menu.  Speaking of menus, I'm running out of ideas for new things (hence the hash brown casserole).  What dishes are favorites in your house?  Post a recipe and leave your link in the comments.  I'm dying to try some new things!

Batch Cooking

I usually cook and post my batch cooking and meal plans on Sunday.  Today is Tuesday.  Sorry!

I have a really good excuse for not getting it all done on Sunday.

Really I do!

Want to hear?

Wait for it....

It was too pretty outside to cook! (please read this in the Disney Land "I'm too excited to sleep!" commercial voice)

Really, it was.  We had been stuck inside for so so long during our freak Texas blizzard.  The weather this week is in the 70s, sunny and GORGEOUS!

But, I did finally get the cooking done.  It was a lighter cook, but my freezer is still pretty full, so a huge batch cooking day wasn't really needed.  Here's what I made this week:

- two Spaghetti Pies
- a double batch of Lemon Blueberry Scones
- two steaks marinaded for Grilled Steak Gyros, along with Yogurt Dipping Sauce
- two King Ranch Chicken casseroles (I'm so excited about this recipe!  We LOVE King Ranch Chicken, but my old recipe called for a whole block of Velveeta... this one is much more natural)
- Artisan bread starter

I've made my own bread for a while now, always using a sourdough starter.  It's something my Mother-in-Law used to do with Heath and they called it Monster Bread because you had to feed it every day and then as it rose it grew like a monster.  It's fun!  I am excited to try my hand at an Artisan starter - I've heard good things!

Here's our menu for this week... you'll see some repeats from last week.  We wound up with some extra left-overs, so the tacos and breakfast for dinner didn't get made according to plan.

Monday: Valentines Day!
Tuesday: Neighbor Dinner
Wednesday: Meatloaf leftovers
Thursday: Tacos
Friday: Spaghetti Pie
Saturday: Pizza Out after Cash's party
Sunday: Breakfast for Dinner
