Sunday: Parmesan Crusted Chicken - I'll totally admit that I heard Mark Consuelos giving this recipe on a Hellman's radio ad. I kind of have a crush on him, so I had to try it. I swapped the bread crumbs for GF cracker crumbs
Monday: Apple Meatballs (crock pot recipe coming soon)
Tuesday: Stuffed Peppers
Wednesday: Spaghetti Carbonara
Thursday: Leftovers
Friday: Out to eat
Saturday: Quiche
Breakfasts include: Chocolate zucchini muffins, breakfast quesadillas, smoothies, fruit, oatmeal, raisin bread, waffles and pancakes
Lunches: PB sandwiches (which I often make with leftover pancakes and waffles), quesadillas, nuts, fruit, veggie chips and hummus
Tomorrow is a scheduled cooking day and I'm planning on knocking out: Stuffed Peppers x 3, more muffins x 4, homemade bread and tomato soup x 3.
