I try to let the kids eat "kid food" one night a week. They do such a great job of eating our regular dinners that this makes for a nice treat for them. This mac and cheese is so yummy that it's not quite even kid food... and I often sneak in extra nutrients by throwing in some tuna, ground beef, chicken, steamed broccoli or spinach. Here's the basic recipe:
Ingredients:
one box macaroni (we use whole wheat or quinoa)
1 stick butter
2.5 cups shredded cheddar
1.5 cups milk
2 eggs, beaten
12 oz evaporated milk
To make:
Cook and drain macaroni. Place in crock pot and mix in other ingredients. Cook on low for 3-4 hours.
This is perfect for those nights that we have to be at church at 6... I know the kids will gobble it up fast and that gets us out the door on time!
