This recipe is from the now-defunct Child Magazine. I can't find a link to it online, so I'll post the full recipe here. I really like the punch it packs nutrient-wise with the addition of the mushrooms and carrots, and my kids like the surprise cheesy center!
Ingredients:
1/2 cup old fashioned oats
8 oz of ground beef
8 oz of ground turkey
1 cup finely chopped onion
1 cup finely grated carrots
1 cup finely minced mushrooms
1 large egg
1/2 cup chicken broth
4 pieces mozzarella string cheese, cut into thirds
1 tsp Mrs. Dash
1/2 tsp salt
2 tbs of tomato paste
To Make:
Preheat oven to 400. Place oats on cookie sheet and toast until beginning to brown, about 5 minutes. Cool. In a bowl, combine beef, turkey, onion, carrots, mushrooms, eggs and oats Ina small bowl, gradually stir broth, seasoning and salt into the tomato paste and pour into meat mixture, mix well. Divide into 24 equal portions.
Put half the portions into two six-cup muffin pans. Press one piece of cheese into the center of each. Top with remaining meat mixture and press edges to seal. Bake 30 minutes (at 400) until cheese melts and meat is cooked.
