I'm a peanut butter purist. I love peanut butter, but I don't want it mixed with anything... no peanut butter cups, no peanut butter and jelly, just peanut butter on a spoon - thank you very much!
Because of my penchant for peanut butter, we always have it around the house. Did you know that there are lots of yummy recipes you can make with peanut butter? Here are two of my favorites (both are GF/CF, of course):
Thai Chicken
Approx. 6 large chicken breasts
3/4 cup peanut butter
1/2 cup hot sauce (I use mild so it doesn't spice the kids out)
juice from one lime
Mix all ingredients together (minus chicken). Place chicken in crock pot, cover with mixture and cook on low all day - approx. 8 hours. Serve over rice and enjoy!
GF/CF Peanut Butter Cookies (really the best PB recipe out there, gluten free or otherwise)
1 cup peanut butter*
1 cup sugar (can use white, brown or a mixture)
1 egg
1 tsp. vanilla
*if you are using non-natural peanut butter (that already has sugar added) decrease the sugar a bit
Mix everything together to form a crumbly dough. Roll into balls and smoosh (yes, I know VERY technical term) with a fork to get that patented peanut butter cookie look. Bake at 350 for 8-10 minutes. Makes 1 dozen.
Both of these stand-bys are "no recipes needed" cooking. Neither are totally original, you can google and find variations of each easily. You can also tweak and change anything and it will still turn out great. Do you have any favorite recipes that use peanut butter? I'd love to hear!

I've never met a kid who was allowed peanut butter that didn't love "Ants on Logs" snacks.
Celery with peanut butter filling, and raisins stuck in the PB for the ants...yum!
(thats my only presumably GF/CF recipe for PB)
We used to eat "ants on a log" all the time in girl scouts. Sometimes we'd sub craisins to make red and black ants. :) I know it sounds really bizarre, but as a kid, we would eat peanut butter spread on a green cabbage leaf and rolled up. I swear, it sounds gross, but we loved them!
Thanks for posting the Thai chicken recipe. I want to start doing more crock pot recipes. And that is a YUMMY one!
I tried the PB cookies yesterday....I have a question....my dough was not crumbly - it was rather moist....and also, the cookies are pretty sweet....much sweeter than we are used to....I did use natural PB. Any thoughts? They are so easy, but they didn't turn out quite like I expected....did I do something wrong?
